Swiss chard is a good source of vitamins K, A and C, magnesium, potassium, iron and fiber.
There are three types of Swiss chard: rainbow chard, ruby or red chard, and white or yellow stemmed chard. Look for Swiss chard that is vivid green in color and does not have any browning or yellowing.

- 1 lb fresh green beans, washed and cut into pieces
- 1/2 red onion, thinly sliced
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup fresh basil, finely chopped (or 2 tablespoons dried basil)
- 2 cloves of garlic, minced
- 1 1/2 tablespoon olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Directions
- Bring a pot of water to a boil. Blanch green beans in water for about 3 minutes.
- Drain and transfer to an ice bath for another 2-3 minutes.
- Drain and place green beans in a large bowl.
- Add in remaining ingredients, and toss well.
